Casserole a la maison

Ingredients :

    4 people

    • 1 large pork hock
    • 12 pork ribs
    •  4 sausages
    •  6 shallots – sliced
    •  10 potatoes – cubed
    •   butter and oil
    •  1 pint of chicken stock
    •  1 savoy cabbage – quartered

     

Method :

1.             Cook the hock and ribs in salted water for one and half or two hours.

2.            When the pork is cooked brown the sausages in butter and oil for 5 mins.

3.            Add the vegetables to the sausages and brown: add the boiling chicken stock, cover the pan and cook for 40 mins.  Boil the cabbage quarters for 6 mins.

4.            Drain the vegetables and sausages.  Drain the pork hock and ribs.

5.            In a large shallow dish make a bed of the vegetables, add the pork and arrange the cabbage quarters on top.

6.            Season and serve.
